• 00:00:00 Antonio Cruz, an executive for 25 years in multinational companies, shares his experience of losing his job and the fear that was the most difficult experience of his life. He shares the story of how he and four friends decided to start their own company, and how they developed a technology that has led to products such as healthy sweets that Modular Digestion, one of the key functions of the human body, was added to. This technology has taken more than a century to develop, but 5 Mexican entrepreneurs were the first to make a breakthrough in this field and they succeeded because they knew who to talk to - mathematicians and scientists with PhDs in scientific research. However, the praise and congratulations that they received were not enough to guarantee their success in the commercial world and there is nothing more demoralizing than a cruel, unfeeling shelf. They realized that there were two main areas to conquer: a hard scientific field that would take them to a prototype functional product, and a soft social human field that would allow them to communicate their technology in a simple, direct way. Neither field was easy, but together they led to many successes.

One is biopharma, where Germans are leading the way; another is biocombustibles, where America is leading the way; and, finally, there is a bio-foods industry that is still in its infancy, but is poised to take off in the next decade. Mexican food companies are poised to take advantage of this growth, as are Latin American indigenous cultures that have a long history of fermenting and processing foods using traditional methods.
